Olive Bars
Since ancient times olives have always been an important part of the diet of both Roman and Greek soldiers, mainly served in "Tabernae" and mostly used as a light meal matched with a glass of wine. It is safe to say that olives can be regarded as the first snack in history. Romans knew many types of processing methods for table olives and in his famous treatise "Libri ad Marcum Filium" the statesman Marcus Porcius Cato (234-149 BC) known as the Elder or the Censor,explained all the different ways to stock safely green and black olives either whole or cracked, from the simple soaking in water to the brine curing, seasoning them with dried fennel or with fruits of mastic, ending with the oven processing.
